In Rabo de Peixe, on São Miguel Island, the tradition of alcatra, a beef dish simmered for twelve hours in a wood-fired oven with spices, onions and white wine. Paulo respects the tradition and serves it with massa sovada, a sweet Azorean bread.

Ingredients : Beef, lard, two cloves, a cinnamon stick, osso buco,  , smoked bacon, black pepper, Jamaica pepper, butter and white wine.
