In a remote Basque valley close to the Spanish border, three villages have joined forces to take up the challenge they set themselves: to live and work in the country. The older generations, who have passed on their courage, rigor and love of the rural world, are delighted. Today, young Basques are returning home to take over their parents' farms and start families. At the heart of this phenomenon is the Kintoa Basque pig, a local breed once threatened with extinction. Butcher Pierre Oteiza, who rediscovered what he calls the “king of pigs”, has made the species flourish in the valley thanks to a handful of willing and dynamic breeders.
