Continuing her adventures in the cooking of Great Britain, Sarah Wiener's next stop is in North Yorkshire, not far from England's highest peat bogs. Pickering is a small town on the edge of a vast peat bog.

Victor Buchanan, who runs the White Swan Inn, awaits his guest with a challenge that will require great sleight of hand - roasting a Red Grouse to perfection, until the skin crackles. Hunting the bird is one of England's great high-society events. It used to be reserved for the aristocracy and major landowners but today it is not uncommon to see City bankers being dropped off at the hunt by helicopter!
But before she can load her gun, Sarah Wiener has to answer three questions: What exactly is the famous twelve? What does Sarah like about hunting? And how should the bird be roasted in order to get that deliciously crackly skin?
