In Jaipur, in Rajasthan in northern India, chilli pepper is a key local ingredient.

To find out more about this spice, a favourite among Indians, Sarah travels to the small town of Samode, where the Yadar family grow lemons and cabbages, and particularly chilli peppers. The Yadars share with her a delicious vegetable masala, made from their own produce. Close by, the farmer Shravan grows another favourite plant of the Indians – mustard. In this region, where water is scarce and precious, cooking is often done in mustard seed oil. The leaves of the plant are also eaten as a vegetable, for example, in sarson ka saag, a typical, highly perfumed dish. Finally, Sarah ends her journey in a Maharaja’s palace, where the host prepares a junglee maas, a spicy lamb dish.
