Sarah Wiener travels to the Mekong Delta, in search of the best spring-roll recipe in the whole of Vietnam. This region of floating canteens and markets is the rice granary of the south of the country.

On the way, she discovers how to make a sweet-and-sour bindweed soup and a lotus-root salad, before turning her hand to making rice paper leaves - thin pancakes that are dried in the sun and that form the basis of the spring roll. Finally, she goes to the restaurant of Chef Mme Suong, who teaches her how to make spring rolls, using a huge elephant ear fish, which Sarah fries whole, scales and all.
