Sarah travels to the small fishing port of Gobo, in Osaka Bay, to discover the origins of sushi, a dish that is synonymous with Japanese cuisine.
In this region, women are reputed to bring bad luck at sea, but Sarah manages to find a fisherman who agrees to take her on board his boat, and who tastes freshly caught fish with her, in the form of sashimi.
In the market, she meets Emiko, who passes on to her an ancestral recipe for nare-sushi, a fermented salt-fish sushi. For this dish, everything must be prepared in the just the right way, and the cook must wear a traditional kimono. Contrary to popular belief, sushi is not always little blocks of rice, and does not always consist of fish.
Alongside the farmer Tomiko, Sarah concocts a kaki-chirashi-sushi: the rice is placed directly on the plate, and served with slices of kaki, a firm-fleshed, delicately sweet fruit, that the Japanese are very fond of. Finally, Koshi Teranishi, the city’s most famous chef, shows that preparing sushi requires finesse and precision.
