We travel to Crete to find out how to make a really good olive oil.

Sarah Wiener visits Manolis Koutoulakis’ farm, where she learns how to choose the best olives, and how to preserve them in lemon brine. Then she attends the picking of the fruit, carried out using modern machinery that shakes the branches of the olive trees. She then samples the olive’s tastiest and most expensive nectar: extra-virgin olive oil, before cooking a chicken, stewed in preserved olives.
